RECIPE: In a mixing glass with lots of ice add one part of Yzaguirre White Vermouth with two parts of a good dry gin. Add a few drops of the liquid from the spring onions and stir for 20 seconds until the mixture is well chilled and strain into a chilled Martini glass. Add 3 spring onions on a skewer to garnish.

TIP 1: Serve it in a metal glass and bring out the umami taste of the spring onions.

TIP 2: Mash a slice of white radish in the mixing glass before making the cocktail. It will enhance the vegetal notes and add a delicious spicy touch.

HISTORY: There are limitless ways to modify the classic vermouth, from tried-and-true iterations like the 50/50 and those that combine a liqueur with sugary mixers in a stemmed glass. But one of the best variations is also the easiest to make, simply requiring a specific garnish to set it apart from all other vermouths. The Gibson is made with gin and dry vermouth and garnished with a pickled onion, not an olive or a slice of lemon. It's only a Gibson when that tasty onion garnishes the glass, adding its umami nuance to the classic cocktail. The origin of this drink is not entirely clear, but it is possible that the Gibson was created by San Francisco businessman Walter D.K. Gibson in the late 19th century at the Bohemian Club. The Gibson first appeared in print in the 1908 book, "The Drinks of the World and How to Mix Them" by William Boothby. But of course, the Gibson was better known for what it omitted than what it added. During that time, it was customary to add a dash or two of bitters to a vermouth. The Gibson was made without bitters and the necessary onion was not strictly associated with the drink until years later. Gin is the traditional choice when making Gibsons, but as vodka usurped gin's botanical throne over the decades, Gibsons with vodka became common. You can choose the liquor of your choice. The dry, bracing gin gives the cocktail more of its own character, while the smoother vodka takes a back seat to the other components.
